Our Wheat Patties are a nod to Caribbean baking traditions, reimagined with the artisan quality that defines Pain Au Lait Bakery. Each patty starts with a dough made from stone-ground whole wheat flour, giving it a rich, nutty depth that pairs beautifully with the flaky, layered texture created by folding cold butter into the dough. The result is a golden, crisp exterior that shatters gently when you bite into it, revealing tender, wheaty layers inside.
What sets our wheat patties apart is the care we put into every step. We laminate the dough by hand — folding and rolling it multiple times to create dozens of paper-thin layers of butter and wheat. This labor-intensive process is what gives each patty its signature flakiness. We use real butter, never shortening, because the flavor difference is unmistakable. The whole wheat flour adds fiber and nutrients while contributing a warm, toasty flavor that white flour simply cannot deliver.
These wheat patties are baked fresh in small batches at our Freeport bakery and sold by the dozen. They are perfect on their own as a snack, alongside a cup of tea or coffee, or as an accompaniment to soups and stews. Many of our customers enjoy them warm from the oven with a spread of butter or jam. They also freeze beautifully — just reheat in a 350-degree oven for a few minutes and they taste as fresh as the day they were baked.
