Our Artisan Sourdough begins with a living sourdough starter that we have been feeding and nurturing for years. This wild-yeast culture is the heart of the bread, providing the natural leavening that gives sourdough its unmistakable tang, its open crumb structure, and its deeply satisfying chew. There is no commercial yeast in this loaf — just flour, water, salt, and time.
Each batch goes through a long, cold fermentation that can last up to 36 hours. This slow process develops layers of flavor that you simply cannot achieve with shortcuts. The natural acids produced during fermentation also make sourdough easier to digest than conventional bread, breaking down gluten and phytic acid before the loaf ever reaches your table. It is artisan baking in the truest sense of the word.
